WHere is a home-style take on a drink found on a new drinks list. It's a large-volume pre-mixed that is packed with tastes of the Christmas time, making it perfect for a celebration. Reserve the remaining cordial to use in breakfast cocktails, sweets, or for additional servings of this cocktail.
The Bikini Cocktail
Makes enough for 10 servings
To make the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
Ingredients for the Cocktail (makes 850ml, to serve 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (see above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
Making the Cordial: Put the listed items in a pot, bring to a simmer, stirring until the sugar dissolves. Then, remove from the stove and let it to cool entirely. Pour into an sealable bottle, close it keeping it chilled, it can be stored for around one month.
To make Premix: Combine the specified liquid ingredients into a large bottle, let it rest for one hour, then pass it through preferably using muslin, to ensure it's completely strained.
To serve: Add 85ml from the premix into a stirring glass filled with ice, gently stirring carefully for about 60 seconds until cold. Strain into a chilled martini glass or equivalent, garnish with a few cranberries and complete it with a light spray of the essential oil over the drink.
